Rouge de Bordeaux Flour


From the fields of France in the 1800s to our family farm today, we are excited to grow this heirloom grain. Known for its beautiful color and nutty flavor, it is excellent for sourdough and your favorite artisan bread recipes and baked goods.  High in protein, finely ground, whole wheat flour from certified regeneratively grown hard red wheat.  The classic choice of French bakers!

One other interesting thing to note about Rouge de Bordeaux: we have found that many of our friends and family who have a gluten intolerance do not have a negative reaction to products made with Rouge de Bordeaux. Rouge de Bordeaux Flour

We began using the Rouge flour due to my gluten issues and even my family members who have no issues with gluten prefer this flour for its flavor. It really makes a difference in the taste of our baked goods and I don't care how many toppings we put on our pizza, we have to use this flour for the best flavor!

R de B Bread

I bake a variety of sour dough breads. I usually use a blend of whole grain flours for my bread. But, when I use R de B flour, I bake loaves that are 100% R de B flour. Suggested recipe for sandwich bread: 500 grams R de B flour; 21 grams scalded milk; 210 grams water; 2 T melted unsalted butter; 30 grams honey; 9 grams salt; 75 grams starter. If using yeast instead of starter; begin by mixing 1/4 t of yeast with 35 grams flour and 35 grams water - let stand for 8 to 12 hours and add another 1/4 t of yeast. Use this mixture as a substitute for the starter. Enjoy!
